Deleting PDF pages means removing selected pages from a document and saving a smaller file with the remaining pages in order. Whatever you mark for removal is gone from the new file; everything else keeps its relative sequence.

Choose delete when the pages should not exist in the outgoing file. Choose split when you still need those pages as separate documents. Choose organize when every page stays, just in a new order. Mixing these up is a frequent source of "I meant to keep that" moments - if you might need the page later, split or keep a full original instead of deleting from your only copy.

Practical tips

Keep at least one page; a zero-page PDF is not useful. Review thumbnails carefully - similar looking forms are easy to mark by mistake. If you are removing sensitive pages before sharing, also consider whether metadata or other attachments still reveal more than you intend; page delete cleans page content, not every possible property.
